If there were red-carpet awards for fish, this year's trophy would go to the Black Cod. Neither black, nor a cod, this unassuming looking fish stuns tasters with it's smooth, silky demeanor, yet critics rave about how easy it is to work with. This fish is definitely not a diva, giving bravura performances no matter how little preparation it is given. It shines as best lead actor in an unscripted pan sauté just as brightly as in a blockbuster Nobu-inspired recipe. But just like many other American actors (for black cod is native to the US) it is most popular overseas. Lately, though, American audiences have been quick to discover this versatile fish, and box office sales are through the roof.
